Baked Peach Chicken


I used to just run to the store for every single thing. Well, since that’s a lot harder now, when I had an extra piece of chicken from pre-making dinner this morning and leftover canned peaches, I made this for lunch. The original recipe asked for o.j. which I didn’t have so I improvised. My frame of mind has been different the past few days–simple and don’t-waste-anything.  đŸ§¡

Baked Peach Chicken

1 chicken breast, cut up
1 cup canned peaches with 1-1/2 to 2 cups juice
2 tbsp Vinegar
1/4 cup flour, pinch salt and pepper
dried parsley

Preheat oven to 350 deg. Put chicken pieces in flour mix. Brown on all sides in medium hot oil. Combine peach juice and vinegar. Pour over drained chicken in baking dish, sprinkle with parsley, cover with foil and bake for 45 minutes. Top with peach pieces and bake another 5 minutes. Serve over rice. Makes 4 servings.
