Preheat the oven to 350 degrees. Spray the donut molds with nonstick spray. Mix dry ingredients and set aside.
In a large bowl, whisk eggs and add wet ingredients. Mix dry and wet until smooth and pour to the top of 12 donut molds.
Bake for 15 minutes or until toothpick comes out clean. Mix the glaze while donuts cool. Cool donuts for five minutes, then pop them out of the pans.
To dip the donuts: Mix the glaze in a wide-mouthed bowl. Using your fingers, dip the top of each donut into the glaze, making sure all the surface is covered. Put right side up on a cake cooling rack. Let the glaze set for 5-10 minutes and serve.
Recipe Notes
Completely fill the donut molds to the top so that the donuts will have that nice rounded shape.
Ube extract is quite potent and can stain everything, so handle carefully.
