Day 2: Fish tacos with mango salsa


I’ve joined the #100happydays challengeDaily, for 100 days, I will post something that makes me happy. Today, it’s…fish tacos with mango salsa! I’ll even share my simple, super-easy and healthy-ish recipe, my family’s favorite.

Fish Tacos with Mango Salsa

Frozen tilapia fillets, thawed overnight in fridge
2 tbsp. vegetable oil
sour cream
lettuce, shredded
grated cheddar cheese
small flour or corn tortillas

Mango Salsa (mix together):
5 mangoes, peeled and diced
1-2 tomatoes, chopped
2 tbsp. red onion, chopped
cilantro, chopped
juice of 2 lime slices
salt and pepper to taste

1. Prepare mango salsa and set aside.
2. Heat oil then fry tilapia fillets over medium heat, covered, until slightly charred, about 5 minutes each side. It’s done when the fish flakes easily. Season with garlic salt to taste. Be careful to not let it burn or overcook.
3. I like to sear my tortilla in a hot frying pan for a couple minutes on both sides. Put a dollop of sour cream, lettuce, cheese and salsa on tortilla. 
4. Break up fish into bite-sized chunks and add in taco.
5. Serve immediately and enjoy!
