Breakfast, Philippine-Style

I might forget to take my child to soccer practice but she or he would never go without a good breakfast. Now that my oldest goes to junior high, most mornings I get up at 5:30 so I could serve something more than cereal.

Today, for instance, I got up and fixed scones. Some mornings, I fix oatmeal, eggs in a nest (canned hash with egg in the middle), texas toast or crepes (yes, for breakfast!). Or I’ll have store-bought muffins or simple quesadillas.

My husband, who is perfectly fine with cereal or waffles every other day, tells me I don’t have to serve fancier breakfasts. But I do because I know my kids (and my husband) enjoy it.

It all goes back to my mom. She worked outside the home while I was growing up and was very busy. But one thing she never skimped on was a good breakfast to send us off to school with.

Thanks to a tag from Whiteshadow, I will be posting seven things that most people don’t know about me. I decided to post…seven of my favorite breakfasts as a child growing up in the Philippines. They are:

1. Spam and rice
2. longanisa sausage and rice
3. smoked herring (tuyo), fried and served with tomatoes and onion
4. a chocolate porridge called champorado (which my parents called champi-bubbles)
5. fried garlic rice with chocolate milk poured over it
6. tocino (a marinated meat, bad for you but delicious!) and rice
7. hotdog and rice
