Day 17: Biko for breakfast 1


I’ve joined the #100happydays challenge. Daily, for 100 days, I will post something that makes me happy. Today, I had biko (sticky rice) for breakfast. P.S. It’s usually a dessert, but I don’t mind.


My Biko Recipe

Ingredients:

1.5 cups Glutinous rice (sold at Asian stores)
1 can coconut milk
1/2 cup brown sugar
brown sugar for topping

1. Preheat oven to 350 deg.
2. Cook the rice at “brown rice” setting in 3 cups water in a rice cooker. (Stovetop: Bring to boil, then simmer until liquid is gone, but still moist, and rice is tender.) Set aside.
3. Bring coconut milk and brown sugar to boil, stirring often to prevent burning, then simmer till smooth and thickened. Blend with hot rice.
4. Bake rice mixture for 15 minutes.
5. Top with brown sugar (if desired, it’ll be sweet already to begin with) and enjoy!

Great with jackfruit (Asian store) or fresh mango slices. Serves 10
